
Ikokore is a traditional water yam porridge. It is a main staple food of Yoruba people from Ijebuland in Nigeria.
Ikokore is recommended for healthy living because the main ingredient in the dish – the water yam – is very nutritious. It has nutrients that are beneficial to health. It is anti-aging, immune, heals wound and ensures bone growth.
This boosts is also an ideal food for diabetic patients because of its complex carbohydrates, which are slowly absorbed into the blood stream and do not cause abrupt increase in blood sugar.
INGREDIENTS
•Water yam
•Locust bean (iru or ogiri)
•Dried fish
•Palm oil
•Beef or chicken
•Beef, shaki, ponmo
•Shrimp (optional)
•Pepper (tatashe or rodo
•Fresh or tin tomato
•Onions
•Seasoning cubes
•Salt
METHOD
•Season and boil the beef, shaki, and put aside. When it is cooked, leave to cool; then cut into tiny pieces with the pomo.
•Clean and cut dried fish and also set aside.
•Peel the skin off the yams and wash. Use food processor or grater to grate the yams into a mush
•Add water, the dry grounded pepper, ogiri or locust bean, dried fish and shrimps, meat and allow to boil
•When it is boiled, add the grated yam, using your hand to cut and roll into balls, then cover and allow to boil
•Add palm oil, seasoning cube, and salt
•Use a wooden spoon to mix gently to avoid the yam balls from breaking.
•Cover and leave to simmer for 15minutes
INGREDIENTS FOR SEASONED FRIED CHICKEN
•Chicken
•Onions
•Groundnut oil
•Pepper, tomatoes
•Seasoning cubes
•Salt
METHOD
•Season and boil chicken well. Fry in hot oil. Set aside after frying.
•Slice onions, pepper and tomatoes. Fry in little oil, not too long so the pepper doesn’t become mashy. Let it retain its shape.
•Wrap the pepper round the fried chicken and serve with delicious Ikokore.
